Before I get started on today’s post…there’s a pretty important announcement I need to make. I got engaged a little over a month ago!!  I won’t get into all the details but my fiancé did an amazing job organizing a romantic proposal followed by a party to celebrate with close friends and family. It was the most exciting night of my life. Now it’s all about planning until the big day.

Christmas Eve Calamari Marinara Recipe

Everyone has their holiday meal traditions. One Italian customary meal that many families still partake in on Christmas Eve is the Feast of the Seven Fishes. This dinner celebrates the wait for Jesus’ birth. This commemorative meal became popularized in many Italian American homes and then began to spread. The Feast of the Seven Fishes is not something that my family participates in every year. However; we do have one seafood dish that is always included on Christmas Eve, calamari. My uncle hosts this night’s party and calamari marinara started to show up on the dinner table a few years back. Now I can’t picture Christmas Eve without it. Today’s recipe is my take on this symbolic holiday meal.

Its Christmas Cookie season! The only problem with that is….my baking abilities aren’t quite caught up to my cooking ones yet. I dabble in trying recipes out and changing an ingredient here or there. But, I truly have not yet mastered the art of baking. But I do love to partake in the annual tradition of making edible treats to bring to parties, set out on the holiday table, and even package up as gifts.

Thai Curry Chicken Casserole Recipe

During my moments of recipe conceptualizing (which I have referenced before predominantly happen during my long commute to work) I’ve noticed that my brain gravitates towards specific food groups. Italian food ideas are my most dominant brain default and I could probably create a new pasta every day for 365 days. But, the other food group I tend to think most about is Asian cuisine. I love the exotic, bright, and spicy flavors in Malaysian, Vietnamese, and especially Thai cooking. Thought clouds of ginger and chili peppers are always dancing in my head. I have been experimenting quite a bit in this area so expect to get a handful of Asian inspired meals in the upcoming months!
