Two weeks ago I had the privilege to host my 8th annual Christmas fundraiser party. In my first year it started as a simple living room cocktail party where a handful of my closest friends brought a toy to donate. In year eight the celebration, number of people and donations continues to grow. This continued experience gives back to me just as much as it does for the organization we contribute to. Every year my heart grows seeing all of the love and support from my family and friends. Their generosity is astounding and their excitement to help is ever-growing.
Today’s recipe is exactly as it is described in its title, simple. In browsing through pinterest months ago I had caught a photo of someone “smashing” their baked potatoes. I loved how they looked and the thought of a little extra crisp to my traditional baked potatoes sounded fantastic. I started to play around with doing this smashed approach to baby potatoes and they came out great. This side dish pairs perfectly with a nice weekend steak and wine duo.
Every Christmas season I start to brainstorm what small bites I’ll be whipping up to entertain guests and bring to all those holiday parties. The ironic part is that I typically get asked to bring the same two appetizers for every occasion. One dish being my “mom’s” famous recipe for cranberry meatballs. The other, raspberry brie cups. Why haven’t I put them on the blog yet you ask? Well, it turns out my mom’s recipe for the cranberry meatballs are actually one that was trademarked by Oceanspray (But I encourage you to look it up; it’s SUPER easy and they always win over the crowd). As for the brie cups, they may come one day but, today isn’t the day!
It’s the most wonderful time of the year! The sparkling lights, festive décor, and of course lots and LOTS of holiday food. Get your winter jackets, mittens and hats ready to go out into the cold for some of these awesome festive events around the state this month.
