Cheddar and Chive Savory Zucchini Bread Recipe

I’m back with another way to use those garden zucchinis. You didn’t think I was going to give you only one option right? Well, this time it’s I’m taking the savory route. This cheddar and chive savory zucchini bread will have you swooning at first bite!

I’m almost always a savory over sweet kind of girl. Give me a bag of potato chips over a box of candy any time. That thinking is what got my wheels spinning on transforming zucchini bread into something with that salty factor. After fussing around with a recipe, I struck gold {cheddar cheese gold that is 😉 }.

Now zucchini bread is something that can be devoured (this is the appropriate word when I’m eating it) for breakfast, lunch, or dinner!

I’ve come up with a meal inspiration for each time of day in case you were coming up empty on how to enjoy this savory zucchini bread:

  • Breakfast: Eat your bread slice on the side of scrambled eggs and chicken sausage links
  • Lunch: Zucchini Bread BLT! Lightly toast and butter 2 zucchini bread slices. Put your bacon, lettuce, and tomato slices sandwiched in between them and dig in.
  • Dinner: Make a southern style BBQ meal with baked BBQ chicken, corn, and mashed potatoes (or cauliflower). Put a nice wedge of zucchini bread on the side.

Cheddar and Chive Zucchini Bread Recipe

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: approx 12 slices

Ingredients

  • 2.5 Cups Flour
  • 2 Cups grated Zucchini (about 1 large zucchini)
  • 3 eggs
  • 1 cup of unflavored greek yogurt
  • 1 Cup Shredded Cheddar
  • ¼ cup reduced fat milk
  • ¼ cup minced chives
  • 4 tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • ¼ tsp garlic powder

Instructions

  1. Preheat oven to 350 degrees. Lightly grease or cooking spray large bread pan.
  2. In a large bowl mix together eggs, yogurt, milk.
  3. In a medium bowl whisk together all dry ingredients: flour, baking powder, baking soda, garlic powder, and salt.
  4. Slowly add dry mixture to wet mixture stirring as they combine.
  5. Then add grated zucchini, cheddar, and chives to the bowl. Mix until all ingredients are well combined.
  6. Pour bread batter into the greased baking pan.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.

Notes

This bread will only store 2-3 days ( EAT UP!)
