Calling all Peanut Butter lovers! This dish has your name smeared all over it. The creamy sauce in this recipe has big overtones of peanut butter but, is combined with tangy tamari, citrus, and just a hint of brown sugar. What could be better to pair it with than some dipping ready chicken? So here it is, the ultimate easy recipe for chicken satay and Thai peanut sauce.

I have two quick anecdotes for this recipe. The first was that I initially had a grocery store mix up. As I began to prepare the recipe, I grabbed for my peanut butter (I swear by Jif Natural if you’re wondering) and noticed I bought crunchy. Recipe ruined!!!!!! Well, it could have been. But, I decided that I was just going to go with it. And you know what; it gave the sauce an extra crunchy character I loved so it ended up becoming part of the recipe I am sharing with all of you. Secondly, I don’t have a grill. Our living complex doesn’t allow them. So if you have a grill, more power to you…grill up those skewers for some charred goodness. If you don’t, well this recipe is dedicated to you. I found a way to saute the sticks and then finish them off in the oven so they get the grilled appeal without the technology.

Ways to Enjoy your Chicken Satay

  • Eat you skewers with a salad on the side for a light meal…. even better would have been some pickled cucumber salad (maybe that will have to be a future recipe!)
  • Put out a platter for a summer BBQ
  • Make a fun noodle salad (like my creamy sesame noodles) to pair it with!

Chicken Satay and Thai Peanut Sauce

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: approx 12 chicken skewers

Ingredients

  • For the Chicken:
  • 2lbs boneless chicken breast
  • 1 tbsp sesame oil
  • Juice from half lime
  • 1 clove garlic, minced
  • 1 tbsp tamari
  • 1/2 tsp each salt and pepper
  • 12 short wooden skewers
  • For the Thai Peanut Sauce:
  • 1/2 cup chunky peanut butter
  • 1/4 cup tamari
  • Juice 1 lime
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1/8 tsp each salt, crushed red pepper, ground ginger, and garlic powder

Instructions

  1. For the Chicken:
  2. Preheat 400 degrees. Cut the chicken into long strips. Add sesame oil, lime juice, tamari, garlic, salt, pepper and chicken strips to a large plastic bag. Shake to coat. Then work to weave chicken strips onto skewers.
  3. Saute chicken in pan or on a griddle for 2 &1/2 min per side.
  4. Then lay chicken skewers on foil lined pan. Bake for 10 minutes.to finish.
  5. For the Thai Peanut Sauce:
  6. add lime juice, tamari, and sesame oil, garlic powder, salt, pepper, and ginger to a small bowl. using a fork, whisk in brown sugar and peanut butter. Stir until sauce is smooth and no longer separated. Top with some crushed peanuts if desired.
