How do you do Taco Tuesdays when you are doing a gluten and dairy free challenge for the month??? Well, today I am going to show you! In two words it’s…taco salad. Just because you are on a diet doesn’t mean you need to give up flavorful foods or your beloved festive meals. American style tacos (you know… the kind made right from the Ortega box recipe) happen to be a favorite of mine. And yes, the cheese and those flour tortillas are definitely part of that winning combination. However; you can still make a mean salad that gives you the satisfaction of tacos.
For this recipe I layered my taco salad into an extra-large mason jar. This makes it easy to transport to work for lunches or store in the fridge for meals throughout the week. However; it’s not a necessity when making the salad. Pack your ingredients however you like!

- 1 lb lean ground beef
- 1 packet of taco seasoning (Gluten Free –if you are on that diet)
- 1 cup salsa
- ½ cup canned sweet corn
- ½ cup sliced black olives
- 1 avocado
- 4 cups romaine lettuce
- ½ cup fritos
- Cook the ground beef as directed on the packet of taco seasoning. Dice the avocado and wash lettuce.
- Layer all ingredients in large jars or bowls. Mix well before serving!
- I use the salsa as my dressing but feel free to add a dressing of your choice if this isn’t enough.
