These Mediterranean Turkey Cucumber Sandwiches were created to satisfy the need for a quick, healthy and delicious meal.
Life has been hectic lately to say the least. Working a full time job, planning a wedding, keeping up with the blog, getting in my crossfit workouts four days a week and juggling my very busy personal life is not an easy task. Is it rewarding? Yes, but certainly not simple. In the midst of falling behind with Behind the Plates posts and social media updates I have also hit an innovative block. I started to be more serious about my wedding diet once the New Year came around. In addition to taking an overall healthier approach to meals, I also have decided to give up one thing entirely each month in order to keep up the motivation. Last month it was alcohol. February has been a dairy free (to the best of my ability) month. Next month the attempt to give up gluten will start.
In taking up these full time healthy habits I found out some things about my cooking lifestyle. So many of the recipes that I share on the blog are the heartier weekend meals that I create because that is when I have time to cook and photograph. They also tend to be recipes I create when I am hosting events. So often they are what most would consider “treat meals”. What I am getting at is that my everyday eating is a lot less glamorous and share worthy then many of the meals I have posted in the past. Who would want to save another recipe for simple baked chicken with steamed vegetables? Bloggers are trying to grab readers’ attention so I tend to think about more trendy and outside the box recipes to share.
This is where my cooking block has come in. How can I share healthy, simple, everyday recipes that will catch your eyes? It’s something I will need to work on more over the next few months.
Today’s recipe is a byproduct of these very thoughts. As I tried to pull together a healthy Saturday lunch with what I had in my refrigerator this is what I came up with. It occurred to me that not every recipe has to be revolutionary. This is the type of recipe I would see on Pinterest and think “What a quick and easy lunch idea!” So, why not share it.
Pair your sandwiches with a crunchy snack like veggie Pop chips or pretzels.

- 8 slices of deli turkey
- 2 cucumbers
- ½ cup hummus
- ¼ cup Kalamata olives, chopped or in tapenade form
- Slice the end off of the cucumbers. Then also vertically slice off a thin sliver on 2 sides of each of the cucumbers. This will square off the tops and bottoms. After this, cut each cucumber vertically into 4 slices. You should now have 8 cucumber slices.
- Spread about 2 tbsp of hummus and a tbsp. of olives onto 4 of the cucumber slices. Top each sandwich with 2 slices of turkey. Then finish the sandwich off with another layer of cucumber.
