Shrimp Scampi Wontons with Lemon Parlsey Pistou Recipe

I’m so excited to bring all of you today’s recipe for Shrimp Scampi Wontons! We’re hoping for a winner on our hands.

A few months ago my mother called to tell me she saw a recipe blogger challenge in the newspaper and she thought I should enter. It was sponsored by Healthy Solutions Spice Blends. After reading up on this company,founded by Shelly Wolcott, I found that its purpose was to bring healthy and affordable spice blends to households. Her spices are free of fillers and preservatives, most have no salt or sugar added, and there is no MSG in any of the blends. After reading about this small woman owned company and her initiative I knew I would love to help support its mission (And of course try to win the contest along the way!).

The contest goal was to come up with an original recipe using one of their spice blends. After confirming my entry it was time to put my creative thinking cap on!

I chose the shrimp scampi spice blend to work with and I knew I wanted to do some type of Italian fusion dish. My goal was to keep the dish simple, healthy, delicious and out of the box.  I landed on using wonton wrappers and merging Asian and European flavors. For those of you who haven’t worked with wonton wrappers before…now’s the time to learn. They are cheap (especially if you purchase them in an Asian supermarket like I did..$2 for 300 of them!), easy to work with and not terrible on the waistline.

I loved how these wontons turned out. They are light and crispy on the outside but with a warm and savory on the interior. The lemon parsley pistou (the French spinoff of a pesto) dipping sauce gives them a burst of herbaceous fresh flavor.  These wontons make for a great dinner party appetizer, afternoon snack, or even a light meal on their own. There’s only a total of 30 minutes of prep and cooking and then they are on the table.

The Healthy Solutions Spice packet gave the shrimp stuffing the perfect zest. I also mixed some into the dipping sauce for a little extra punch of flavor. I’m happy to say that my conveniently reseal-able pouch of  scampi spices still has just enough for one more recipe in the future.  However; now that I’m slightly addicted to these wontons, I may need to get my hands on some more…and pronto!

Shrimp Scampi Wontons with Lemon Parlsey Pistou Recipe

Prep Time: 15 minutes

Cook Time: 15 minutes

Yield: approx 12 pieces

Ingredients

  • For the Shrimp Scampi Wontons:
  • ¾ lb of peeled, deveined shrimp
  • 1/3 cup roasted red peppers
  • 1/3 cup fresh parsley
  • ¼ cup fresh basil
  • ¼ cup panko bread crumbs
  • 1 & ½ tbsp. Healthy Solutions Scampi Spice Blend
  • 1 tbsp white wine
  • Juice from ½ of 1 lemon
  • 20 wonton wrappers
  • 1 egg
  • ¼ cup water
  • For the Lemon Parsley Pistou:
  • Juice from ½ of 1 lemon
  • ¼ cup olive oil
  • ½ cup parsley
  • ¼ cup basil
  • 2 cloves garlic, cut in quarters

Instructions

  1. For the Shrimp Scampi Wontons:
  2. Tools needed- food processor
  3. Preheat the oven to 400 degrees.
  4. Put shrimp, roasted red peppers, parsley, basil, breadcrumbs, ½ of one lemon’s juice, white wine, and Healthy Solutions Spice Blend into the food processor. Pulse for 30 second to one minute until there are no longer any large bits of shrimp and all ingredients are blended (It should have the consistency of ground chicken).
  5. Spray 2 large baking sheets with non-stick spray. Whisk together the 1 egg and ¼ cup of water in a small bowl.
  6. Take a small spoonful of shrimp stuffing and place in the center of each wonton. First dip your fingers into the egg mixture then continuing to use your fingers bring the 2 opposite corners together and pinch at the top, repeat the same with the other 2 corners. It should form a little closed tent like top. You can then lightly brush a little more of the egg mixture on the exterior of the wonton (This will help them getting golden brown and crispy!). Repeat this same process with each of the wontons.
  7. Bake for 10-12 minutes or until golden brown.
  8. For the Lemon Parsley Pistou:
  9. Tools needed-food processor or blender
  10. Place all ingredients into blender and pulse for 30 second to 1 minute or until smooth. Serve alongside your crispy wontons!
