Turkey Tacos Stuffed Sweet Potatoes Recipe

Taco Tuesdays are the BEST days! I’m sharing not one, but two sweet potato centered recipes this week. So let’s focus on the first. This recipe for Turkey Tacos Stuffed Sweet Potatoes make the ideal weeknight meal. Ton’s of flavor and simple instructions are two keys to weeknight dinner success.

Before I get into the recipe I wanted to share a cooking tip. It’s for softening up those sweet potatoes. There are so many methods out there, and I’ve tested out many of them. I’ve landed on a full-proof way to get the consistency I need for stuffing sweet potatoes. And believe it or not it involves the microwave. I know, not exactly world-class cooking. But, hey it works and on nights when I have limited time it’s a saver. So here it is. Use a glass dish that is microwave safe. Fill it so that the bottom is covered in about a half inch of water. Wash and dry the potatoes. Use a knife to poke holes (about 3 per side….so maybe 12 in total) around the sweet potato. Place two potatoes at a time in the dish. Then, wet a paper towel and lay it over the potatoes. Cook for 5 minutes, flip the potatoes and cook for 5 more. Voila, you’re ready to scoop out some of the insides for stuffing. They shouldn’t be overcooked and they should be soft enough to scoop the middles out.

Turkey Tacos Stuffed Sweet Potatoes Recipe

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: 4 servings

Ingredients

  • 4 large sweet potatoes
  • 1lb ground turkey
  • Low Sodium Taco Seasoning Packet (your choice)
  • 1/2 cup canned sweet corn (drained)
  • 1/2 cup black beans (drained)
  • 1 cup medium salsa
  • 1/2 shredded cheddar
  • 2 scallions , sliced

Instructions

  1. Preheat oven to 375 degrees. Line a baking sheet with foil.
  2. Meanwhile, in a large skillet add the ground turkey. Cook until no pink remains. Add taco seasoning and follow package directions.
  3. Once the taco seasoning sauce is fully coating the meat, add corn, beans, and salsa. Cook for 5 minutes.
  4. While taco meat is cooking start the potatoes. If you missed my description in the post, here's how: Use a glass dish that is microwave safe.   5. Now you're ready to scoop out some of the insides for stuffing. They shouldn't be overcooked and they should be soft enough to scoop the middles out.
  6. Cut the sweet potatoes in half (long ways).
  7. Scoop a large spoonful of potato out of the center to make a cavity for the taco filling.
  8. Add a heaping scoop of the taco mixture to each potato.
  9. Top off with cheese.
  10. Cook for 10-12 minutes or until cheese starts to bubble.
  11. Top with sliced green onion and serve.
