Blue Cheese and Hot Pepper Jelly Bites Recipe

Blue Cheese and Hot Pepper Jelly Bites Recipe

Has anyone ever noticed that blue cheese has superhero like pairing powers? But seriously, I feel like it’s one of those cheeses that pairs well with just about anything. Cured meats, fruit spreads, and even hot peppers all seem to harmonize with its bold flavors. I know for some it’s an acquired taste, but I’m assuming if you landed on this recipe, you’re a fan of this punchy cheese. Today’s recipe is for the VERY simple cocktail party recipe of Blue Cheese and Hot Pepper Jelly Bites.

If you’ve never used frozen phyllo cups before, you need to introduce yourself. You can stuff them with just about anything and they turn into an inspired appetizer in minutes! The possibilities are endless. And no, this is not an ad, just me boasting my enthusiasm for the product.  But for this recipe’s sake I layered crumbly blue cheese and a small scoop of pre-made hot pepper jelly into the phyllo cups. The cheese melts into the jelly and you’re left with a powerful flavor combination.  They’re a little sweet, a little spicy, and a bit salty. It’s the best of ALL worlds!

For those of you wondering where to get that hot-pepper jelly you can usually find it in either the gourmet cheese section or in your regular jelly aisle.  I’m also linking to one here on amazon:

I don’t care for blue cheese but I would love this with a bit of cream cheese instead. Or on crackers and red pepper jelly – yum
