Many of you know by now that I LOVE to host get-togethers, dinner parties, and Sunday gatherings. Pretty much any type of party with friends and I’m happy to play entertainer. For my latest party I joined
up with VOVETI Prosecco to do some fun cocktail party style pairings. VOVETI is a brut style DOC with tempered acidity and a fresh, graceful profile. I found that it’s an easy drinking aperitif or cocktail, perfect to share with friends.
I wanted to share some pairings that would most likely be found at ALL types of celebrations, the cheese board! Let’s be honest, what’s a party without a good cheese board? And guess what, it’s one of the tastiest ways to pair your prosecco!
I’ll give you the rundown of my personal favorite ways to sip and bite with cheese. But first, a quick disclaimer. While I have personally indulged in all these cheese and bubbly pairings in the past, it was not an option for my latest party (But boy did I miss it…just a few more months until baby arrives and then I’ll be back to indulging!). That’s where my husband and our friends stepped in. They were more than happy to do the taste testing and report back! Thank-goodness my husband is a big fan of prosecco as well, he was able to keep the party going.
First Pairing: Brie and VOVETI
The effervescence of processo is the ideal partner for creamy cheeses like Brie. You could simply put a wedge of soft. brie out for the crowd, but why not think outside the box?! I recently posted my recipe for brie and cranberry crescent bites. The buttery dough and creamy cheese help cut through the bubbles in your glass. VOVETI’s level of dryness also help make this companionship work. Check out my recipe for pairing here: http://www.behindtheplates.com/brie-cranberry-crescent-bites/

Second Pairing: Parmigiano Reggiano or a very sharp aged Cheddar and VOVETI
I personally love a combination of these two cheese together (and yes, a Parmesan Cheddar does exist at some cheese counters!) with my prosecco. The little crystallized crunch in aged cheeses and the saltiness in both cheeses create a bursting flavor mouthful when sipping too. This pairing is for those that like a little intensity!
Third Pairing: Blue Cheese and VOVETI
This final pairing plays on the slightly sour and acidic qualities of this cheese and the prosecco. Blue cheese is going to give you a complex and dynamic pairing experience. Once again, you can simply put out a block of blue cheese for your guests, or get a little creative. My latest appetizer recipe was for some festive blue cheese and pepper jelly bites. The spice in the jelly will add yet another dimension to the taste pairing. And I’ll also mention that spicy foods are a great Prosecco pair. I don’t think we drink this fun, sparkling type of cocktail enough. I’m hoping that knowing it’s as easy as looking to the cheese board at every party for a simple food match will encourage more glasses to be shared!
