It’s here people, the dreaded time of year where we no longer have any excuses to eat mounds of cookies or heavy holiday main courses paired with one too many calorie ridden alcoholic concoctions. While a part of me is sad that the spirit of this foodie season is over, I am definitely ready for some lighter fare. It’s been a week of carb filled gluttony and very little greens. It’s hard to believe but I actually was starting to crave lettuce. So in comes today’s recipe for Grapefruit and Avocado Detox Salad.
I can only hope that this sudden hankering and enthusiasm for clean eating sticks round for the next five months. This resolution season more than ever my list has some diet themes near the top. The official wedding countdown is ticking away for my June nuptials.
Today’s salad recipe was my kickoff meal to reintroducing much needed greens and starting to detox. The seasonal burst of citrus paired with the creamy ripe avocado is a surprisingly refreshing duo. It is so simply topped over peppery arugula and paired with grapefruit vinaigrette. It’s an easy (and delicious) start to healthy eating habits in 2016.

- 1 grapefruit
- 1 avocado
- 4 cups arugula
- 1/2 cup olive oil
- 1/4 cup white vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- Put the olive oil, vinegar, salt and pepper in a salad dressing holder or a container you can shake and mix it up. Squeeze the juice from 1/8 of your grapefruit into the dressing as well and mix.
- Toss the dressing as desired with 4 cups of arugula. Divide the greens into 2 plates. Slice the remaining grapefruit and the full avocado. Layer over the arugula. Serve.
