Ive done it again! I made a batch of blender muffins and we ate the whole batch in a matter of 24 hours (oopsies). This is yet another variation of the gluten and dairy free muffins I often bring you on the blog (click here, here and here …oh and here for other flavors!). I can’t help myself, they are just SO good. And everyone who taste tests with me agrees. And by the way that goes for EVERYONE, I never tell anyone they are diet friendly before letting them try. You’d never know just how clean they are. This recipe highlights a fruit that is coming in to season and one of my absolute favorite. It’s a long recipe title, I know. I’ve really debated on how to label these to best describe. They are Paleo, gluten free, dairy free, banana based, made in a blender, mini, and a clean recipe. How do you fit that all in one short title description along with the flavor?! I keep changing how I want to display it with each recipe I make. The other reason I can never decide is that I don’t want to dissuade people who don’t eat Paleo ( for the record, I do not either!). I also don’t want people to think these are “diet” muffins. I eat these any day of the week as a snack or breakfast, no weight watching required. They are that tasty. However; I do want people to know you simply throw the ingredients in the blender and voila, they are ready to bake. And I do want people who are looking for healthy recipe to be able to find it. What a pickle I’ve created for myself 😉
No matter how I label these little guys, anyone who stumbles on the recipe is in for a great surprise. They are husband, kid, in-law and coworker approved (I’ve tried it!). The only thing I will warn is if you dislike banana this recipe isn’t for you. There is definitely an undertone from the banana base. But, the fresh cherries and chocolate chips are really the stars here.
Whip up a batch for the week and I dare you not to eat them in one sitting.

- 1 banana
- 1 egg
- 1/2 cup almond butter
- 1/3 cup coconut flour
- 3 tbsp honey
- 1 tsp vanilla
- 1/4 tsp baking powder
- 1/4 cup fresh cherries, diced
- 1/3 cup dark chocolate chips
- Preheat oven to 400 degrees. Line a mini muffin tin with 12 liners or if you don’t have those, spray with cooking spray so they don’t stick.
- Add banana, egg, almond butter, coconut flour, honey, vanilla and baking powder to blender. Pulse until smooth.
- Stir in 3/4 of Cherry pieces and chocolate chips.
- Pour evenly into liners and top with remaining chocolate chips and cherries.
- Bake for 12 minutes.
